Ghee

Clarified butter with the milk solids removed, good for high-heat cooking.

Ghee is butter that has been simmered to remove water and milk solids, leaving pure butterfat. It handles high heat well and is often tolerated by people sensitive to dairy proteins. It is a staple fat on the Proper Human Diet.
