My go to Keto Snack

Guacamole has always been one of my favorite foods, I can’t even remember a time in my life that I wasn’t eating it. It also holds a special place in my heart. I know, that sounds really weird right? Hear me out. When Ken first started trying to talk to me – he sent me tons of messages on Facebook. After about 20 tries and me deleting and ignoring him, I finally replied to him. I had ZERO intention of ever dating him much less being in the same room with him. We live in a small town where everyone knows everyone so I did know of him but I didn’t know him well. At the time I had every intention of staying single for the rest of my life. He was smart and funny and I was not about to let him in. There is something to be said about persistence. He just would NOT give up! Finally after asking me to come over multiple times I said yes. He was making homemade guacamole…. how did he know my weak spot!? So off I went, and I just knew it was the dumbest thing I had ever done. We sat, talked about books, and plans we had, and we made some pretty awesome guacamole. The rest I guess is history. Turns out he was an ok guy, well, after a good girl came into his life anyways. I’d like to think I at least have a little to do with that fact that he is definitely the best he has ever been. So, here is our guacamole recipe for all to enjoy. I hope it brings you all as much happiness as it has brought us.

I used 4 well ripened avocados chopped up into cubes.

I place the chopped avocado into my Kitchen Aide Stand Mixer – you can do this with a fork or a hand blender too.

I use the whisk attachment as it makes it the texture that I prefer which is a thick but creamy consistency.

I like to add 2 tbsp of olive oil to add good fats and to make the texture even more creamy. Plus I just love the taste of olive oil.

Tajin I eat this stuff like candy!! But it’s also really good in guacamole and even just on avocado by itself. I use about 1 tbsp but just add it to taste. Gives just a little kick to the flavor.

Sometimes I use all of these but they can be used by themselves too. Natures Seasons has everything you need in one bottle but if you aren’t into that many seasonings then the Himalayan Pink Salt with black pepper and garlic is great! I always add extra garlic. Sometimes I use fresh but if I am in a rush I use this one. If I use fresh, I use 3 cloves minced.

Last, I add the juice of one lime, 1 tbsp of Chopped cilantro and mix till consistency is perfect. If you are like me and still eat some veggies add 1/2 cup of chopped cherry tomatoes and 1/2 cup of chopped red onions.

ENJOY with pork rinds or a spoon!!!!!!
